A healthy deli right in your own home.  Grocery Shopping:  Each week Bella frequents a variety of markets, grocers, farms, butchers & fish mongers;  seeking specialty items, ethnic foods and good quality produce, and products.

Sketti Q  (recipe heist)       (carne)   

Premium Italian spaghettini; boiled pasta topped with premium ground chicken ...sizzled in ceramic skillet with orgeno, high quality EVOO, black beans, splashes of low acidity tomato sauce, chilli seasoning + chilli pepper flakes; blended with lots of ground Russian garlic, tossed with fresh parsley. Technically not stolen. It's from Quattro's cookbook

Michelin meatloaf                 (carne)

3 lbs Sebastian & Co, or locally farmed extra-lean ground beef cuddled with herbs, spices, minced onion, garlic, celery, carrots, zucchini; 5 spice seasonings, ground flax, (and/or nutrional yeast by request). Shaped into 1 large, or two smaller meatloafs; baked for 40 minutes;  basted with sugar free ketchup, returned to oven to be baked till the ketchup sets. 10 mins.

Total Carbs ~approx 3.5 net grams per serving

Bella's dreamy breasts     (carne)

Lean skin-less/bone-less free range/ air-chilled chicken breasts, marinated in my own home-made honey/ citrus/soy sauce. Slow-roasted in clay oven-Romertopf, or BBQ on grill; topped with authentic Mexican seasonings, citrus & Sebastian & Co in-house charcoal. Torched then Sliced.

Chuka nabe niku                (carne)

Assortment of hand chosen / seasonal vegetables tossed in a light sesame-seasoned/ carbon steel Japanese wok; with heat (spice), tamari & touch of hoisin for sweetness. Your choice of Shredded chicken or chopped steak tossed in. 

Noodles or rice can be added by request  -extra charge

Pillows of Poulet                  (carne)

Finest skinless / boneless specialty chicken breasts direct from local farmers or Sebastians & Co; and other fine Butchers. Although I don't technically follow recipes I do read cookbooks daily. These precious pouches came from my Lumiere cookbook.  Thomas Reid (a fine local farm brand from Abbotsford) is the chicken they used.  Each breast is carefully wrapped in Chef Brand (quality parchment paper), then laid over celery, bay leaf, thyme seasonings, a hint of EVOO (or not). Snuggle wrapped & baked 425F for 10-15 mins. Each packet is then unwrapped- cooled & sliced. Lean, mean & clean chicken. Pillowy soft.    

Note: 8 cooked servings of beef @ 4 oz ea = 3 lbs raw meat

If you prefer the use of oil or butter please specify. I use good quality dairy/ EVOO olive oil; and pure Japanese sesame oil / Tamari/ & aged Soy Sauce. Not industrialized soy brands. 

Pave a la creme              (buttery)

Fine quality russet or high starch Yukon Gold potatoes, sliced 'potato chip thin' using a mandolin; soaked, dried and tossed in a buttery cream sauce; seasoned, laid in a parchment slip-lined baking loaf pan. Baked at 300 F for 2 hours. Refridgerated over-night. Removed. Seared. Sliced.   

Note; Yukon & Russet are higher starch potatoes that are measured, sliced,  laid out & dried; tossed in a la creme- layered in a parchment-slip loaf pan. Not a good dish for Vegans or dairy / fat dodgers. See option below.

Batatas pave                       (vegan)

One of my clients, Raina, is an award winning Canadian, fitness competitor. Her & her husband's favourite weekly staple is "sweet potatoes." At one point I decided to play around, because eating the exact same thing each week could become boring; so I came up with a sweet-potato pave (same concept as a cream pave without the cream.) Challenging! My Batatas Pave is a medley of white and orange sweet potatoes tossed in a reduced vegetable (or chicken) broth. It's lean & clean -  a fave of Chris & Raina.

Tip: Sweet potatoes are not yams. True yams are not sweet but local grocery stores label them as yams. Doh!

Weekly soups & stews    carne (or not)

There's something comforting, healthy and simple about soups & stews. I had a client's mom once tell me "anyone can make soup, just toss what you have in a pot with water." I can only imagine there wasn't a lot of flavour or love in that cauldron. Her daughter requested my corn chowder- and texted me the next day to say that "it was the best she'd ever had."  I felt vindicated. To be determined at time of ordering- but some of my year round soups include:

Sweet French onion  - gruyere & mozza  Chicken noodle - carrots, celery, leeks  Corn chowder - veg, potato & cream Japanese miso soup - dashi, mirin, sake Thai basil chicken soup - coconut cream Mexican - black bean, tomato, corn, onion

Cost of meal prep service

A personal chef is pricier than a line cook, a nanny or home delivery service. It takes more time, thought, challenges, and personal touches to create each dish. Specialized meat & produce can ring you up (on average) $165 per week for fine quality groceries (for two people),  5 dishes,  approximately 4 meals per day for 4 working days  Plus meal delivery $25 

Cooking & prep time is between 6 - 6.5 hours on average; organizing, prepping, cleaning food; cooking and packaging, plus clean up time. 

$35 per hour6.5 hours   = $227.50  + GST $11.40  + my services. Add that to total food costs & your total weekly estimated cost  = $428.90     average $53 per day pp 

For one person; estimate is $50 for groceries + 4.5hours x $35 HR =$157.50 +  $8 GST  + $25 delivery = $240.50   total estimated cost /daily average = $60 per day
