A dine snob is born
Bella's curiosity surrounding food & shelf products peaked after her mother passed away of cancer in the late 1980's. This urged her to research cause and affliction; understanding labels; and the origins of clandestine cancer-causing ingredients. This became an obsession for Bella. Bella became fixated on chemical-free foods / no-spray vegetables, ...free-range / organic-feed fed meats... and wild caught seafood. It isn't just about cooking, it's about what is in the pot, the pot itself, and why "healthy ingredients" should be in there.

Luke's lucky buri bowl (vegan)
Premium Shomal basmati rice, or Asian noodles; shredded raw or slow-roasted (local vegetables) and/or additional toppings of choice; legumes, grains, chickpeas, tofu, sweet potatoes, peppers, spinach, bok choy. Herbs
DJ's donabe chili (beef or chicken)
Free-range, organic fed, air-chilled ground chicken- simmered in Donabe clay pot, along with peppers, onion, soaked beans, celery, mushrooms, Mezzetta Tomato Sauce, lime, chili peppers, herbs & Mexican spices.
Chicken Bella - clay baked (carne)
Lean skin-less/bone-less free range/ air-chilled chicken breasts, marinated in my own home-made honey/ citrus/soy sauce. Slow-roasted in clay oven-Romertopf, or BBQ on grill; topped with authentic Mexican seasonings, citrus & Sebastian & Co in-house charcoal. Torched then Sliced.

Chuka nabe karai (vegan)
A vibrant vegetarian option. Assortment of hand chosen / seasonal vegetables tossed in a light sesame-seasoned/ carbon steel Japanese wok; with a spicy, tamari & touch of Apple Hunni for sweetness. Protein * Noodles * See below

Oishii niku (carne)
Choice of delicious, Romertopf (clay pot roasted) or BBQ free-range chicken or beef. Baked or BBQ without use of oil. Your choice of delicately seasoned Mexican, Indian, or Citrus spices and herbs. Servings vary by cooked weight.
Note: 3 lbs of raw beef will yield approximately 36 ounces of cooked beef. 25% weightloss from cooking.
Note: : 48 oz × 0.75 yield = 36 cooked ounces of cooked, skinless, boneless, chicken breasts. NINE 4oz servings, or SIX 6 oz servings of protein.
If you prefer the use of oil or butter please specify. I only use the best quality grass-fed butter, EVOO olive oils; and/or pure Japanese sesame oil / Tamari/ & soy sauces.
Raina's legendary batatas (vegan)
A hearty and healthy, nutrient-rich medley of white and orange sweet potatoes. Slow, oven-roasted in a Romertopf clay pot 1.5 hours. 3 lbs raw = 2 - 2.5 lbs peeled & baked
Note; Sweet potatoes are not yams. True yams are not sweet but local grocery stores label them as yams. Doh!
Chuka nabe greens (vegan)
Each week I suss out seasonal greens according to what is available such as; green beans, broccoli, kale, lettuce, spinach, savoy cabbage, brussels, bok or su choy & gai lan. Greens are either steamed and/or wok tossed.
Note: if the greens look pale, weathered or old I will not purchase them. I will only buy & serve healthy veggies.
Shroom medley & greens (vegan)
Vegan Feature, or Protein can be added. Sesame seasoned Wok tossed melange of mushrooms, Sweet or Spanish onions & kale, red capsicum peppers atop Asian noodles, Japanese somen or rice noodles. 5 spice seasoning, soy, Hunni & Japanese sansho pepper.
Note: Its important to specify your level of heat / spice so that I can tone it up or down to your liking. No heat? N/P

Dine Snob menus feature hand-selected produce and specialty food ingredients, delivering freshness and peak flavour. Frequenting local farms and seasonal markets help me to serve you the quality meals you deserve.
Organics & washing produce
Some clients are shocked that I am soaking unpeeled fruits and vegetables in salt water or baking soda; water or vinegar. I lean towards baking soda for the thick peel type fruits & veggies because they may be coated with wax, resin or Polyethylene Emulsion. You might be saddened by the homely looking lime or avocado staring at you after its been soaked, but I assure you it's for the best. Soaking peaches, cherries, blueberries, tomatoes, celery, broccoli, cabbage, carrots & so on (in salt water) preserves the beauty while removing the guff. Finest salt is used. Never WINDSOR SALT as it contains chemicals and sugar. Kosher and/or sea salt is commonly used in my cooking . You may request just one or the other if you're a dine snob like me.

"Dear Bella. I took photos of your food because it was so wonderful. Mom & her nurse thoroughly enjoyed your dinner. Mom normally hates fish but she loved your tuna, & her fave was the burdock root.
